The 9" (20cm) Deep Skillet With Smooth Finish by AUS-ION is 100% made in Sydney from one seamless piece of 3mm thick Australian sheet iron. A traditional fry pan for most jobs, with 2" high sides. The high walls make this pan a kitchen workhorse giving it versatility to deep fry, saute, braise, roast, or simmer your favorite dishes. AUS-ION cookware is built to last with all of the features and details professional chefs look for in a pan: high quality, comfortable to use and easy to clean. The seamless, one-piece construction means there are no rivets, so there is nothing for food or steel wool particles to get caught in. The handles are ergonomically designed with a wide, concave shape which is more comfortable to use with better control and less hand fatigue. And the generous venting in the handle neck reduces heat transfer for a cooler handle. The pans cook like cast iron but are lighter weight, they heat evenly and will not warp. The entire pan is naturally pre-seasoned for a healthy nonstick option; It is not coated like many steel pan brands, so it arrives ready to cook, no stripping necessary. AUS-ION pans are suitable for use at high heat over any heat source. For best results, follow our instructions. To clean: after cooking, use a wooden utensil or steel wool to gently scrape pan under hot running water. It is best to clean while the pan is still very warm. If necessary, you may use a brush, but be careful not to take off too much of that beautiful seasoning that you have built up! Do not use soap, as it will erode the seasoning. Dry thoroughly with a paper towel while the pan is still warm. If the pan is still relatively new, return to the stove top and wipe the interior of the pan with a small amount of oil, heat until smoking. Then, using tongs, wipe off the excess oil.

I love this pan. I bought it after reading reviews of this AUS-ION line and after having had purchased one of the AUS forte cast iron pans. I seasoned this AUS-ION carbon steel pan in the oven with a crisbee puck roughly 3-4X before I started cooking anything in it and it's started to season up very nicely. The food I've cooked thus far - eggs and a steak - did not stick at all. But again I seasoned this pan 3-4X times in the oven beforehand. When I received the pan it was new and a light olive color - now after one week with a couple oven seasonings with a crisbee it's a dark copper/brown color. A great pan thus far that I'm very happy with.

Best Skillet I've Ever Used.

Straight out of the box, this skillet has a very light coating of seasoning, and so I followed the cooking instructions on the attached tag, which basically says, "ready to cook, no cleaning needed", so I cooked a couple eggs over-easy. With less than a teaspoon of butter in this skillet, which I heated to about 300F, the eggs cooked, WITHOUT STICKING and with only slight coaxing, slid out of the skillet as if cooking on teflon. This has quickly become my favorite skillet and in reading other reviews, I'm sure it will remain a favorite. That said, sadly, I will be retiring my Lodge and Stargazer cast iron, unless I am cooking multiple items! This skillet is worth EVERY Dollar paid, and I'd be more than excited to suggest anyone give one a try.

Awesome pan

This is an excellent pan! It looks and cooks great. The pre-seasoning is pretty thin and splotchy, but dont be put off by it. As you use the pan it will quickly even out and darken. It cooks great right out of the box. I scrubbed mine in hot soapy water with a blue scotchbrite pad and then seasoned it with an ultra-thin coat of soybean oil in a 450 degree oven for an hour. I then did a couple of stove top seasonings just on the cooking surface and then started cooking with it. The seasoning continues to get better and the pan darkens with use

Love this pan. I know there is a newer version that has been roughed up a bit to improve seasoning but all the French carbon steel pans are smooth and they season up fine. For the price discount on this "smooth finish" I jumped at it. And I love it!!!!! I used Crisbee to season it. I did 3 oven seasonings and then did the cook top seasoning. I followed the Auz-Ion instructions for cook top seasoning. Did 3 wipings while it smoked. Then set it aside to cool. Then repeated. The 3rd wiping set off my smoke alarm. :-)

I fried an egg in it this morning and it slid all around. Fantastic pan!

The Aus-Ion line and my experiences

This is just a beautiful and functional pan. I love carbon steel, and this was the best I could find.

After seasoning it in the oven six times with flax oil, it worked great for about two weeks. Of course, the slickness didn't develop until a couple of weeks of consistent use after the oven seasoning, but it did develop and it was wonderful!

Until it wasn't.

There was a spot that began to grab my omelets no matter what I seemed to do. It was always the same spot in the pan.

I tried treating just that spot my stove top seasoning, but no matter what I did, it just kept grabbing my food when I wanted a surface that was non stick. Eventually I ran it through the oven's self cleaning option, and started seasoning all over.

Now it works just perfectly again, and this time the seasoning seems to be hardening on even better than before. It continues to get darker and darker, even when I don't think it CAN get darker. I might mention that this is NOT the satin version they came out with later to address the seasoning lifting off every now and then.

At this point, I think the seasoning is more permanently bonded and less in danger of lifting.

Time will tell, but I can always just strip it off and start again.

I think sometimes the initial seasoning doesn't always work out the first time, and that sometimes an effort needs to be repeated until you get it right.

I might mention that I have a 10" and a 12" pan in the same line WITH the satin surface. The 10" was spectacularly easy to get seasoned properly, but the 12" has presented some challenges, mostly because of the large size compared to the largest size burner on my stove (time for a stove upgrade, perhaps! YESSS!!). On the largest (12") pan, the heat from the burner is located to close to the center of the pan to evenly distribute across the entire surface, meaning I have blistering hot in the center and only mediocre towards the outside. This is no way to cook, let alone season. It's a challenge. The texture of the surface was supposed to make seasoning easier, but in this case it only exasperated an issue. As I said, the 10" was amazingly easy, so I would think the 7" with the satin texture would also be amazing.

A little lacking in the quality control department. Mine arrived warped significantly . Disappointing. I have ordered a replacement, but makes me feel a little bit uneasy as to its longevity. I'll come back and update this review upon reception of a quality pan, and some usage over time.

I really wanted to love this skillet. It works fine for anything but eggs. Frittatas stick like the devil and a major pain in the rear to clean afterwards. Meat is fine, it's the perfect size for one or two. An extremely well made skillet.And I followed the instructions explicitly and did the seasoning in 8 different steps. Maybe I will try to re-season it.

One knock I have, more of a personal pet peeve, everybody goes on about this being a 'carbon' steel skillet. 'Carbon' is the distinguishing factor between steel and iron. There is high carbon and low carbon steel but all steel has carbon in it to varying degrees.

Bottom Surface Uneven and Seasoning Doesn't Hold

Let me start by saying that I own a lot of cast iron and know how to properly season and take care of it. All of my cast iron is seasoned to the point where they are non stick. I had heard great things about this pan, both thru online reviews and YouTube. Bought it because of the very favorable reviews and feedback. Got the pan, which is beautifully designed and pretty to look at. Seasoned it six times per the manufacturer's instructions using flax seed oil and Larbee, alternating the coats. Looked great for its inaugural cooking, done on an induction cooktop. The steak I cooked stuck immediately to the pan despite starting the heat off at a medium low and a nice foundation of cooking oil. Noticed when I put the cooking oil in the pan that it ran out to the perimeter and didn't stay in the center. Despite swirling the pan and trying to get oil under and around the steak, the steak stuck. Clean up was a chore. And the seasoning, which I had spent several hours building, started coming off as well. Still couldn't get some of the fried on bits of the steak off, despite using a chainmail scrubber. Then I noticed when I flipped the pan over once it was sufficiently cool that the base wasn't level. To test my hunch, I used a level like another reviewer had done, and it showed the same result: it wasnt level -- it bowed up in the center. Dealbreaker in my book.

So, despite liking the concept behind the company, the aesthetics of the pan, and really wanting this pan to be a prized part of my cookware collection, it failed to work properly and therefore I returned it.

Haven't tried their newer satin finish skillets yet, and I'm not likely going to. There's too many other great options out there that have been more proven track record than Aus Ion. And my first experience with them was a complete dud and waste of time.

I spent a lot of time seasoning this pan and everything I cook in it sticks and seasoning comes off

This pan will not hold a seasoning. I have seasoned it 6-7 times and when I use it everything sticks and seasoning comes off while cooking. Pan does not sit flat. Very disappointed with this purchase. I was so excited to finally find a cast iron pan that was light weight and I could lift with one hand to serve food out of. It was a big and expensive disappointment!!!!

A superb pan

I've been looking for a proper pan for a long time and I could safely reccomend this pan. It's made of a great carbon steel that doesn't rust anywhere as easily as compared to a carbon steel wok i recently bought. It's a solid piece of metal, I'm not sure how that affects performance in a home kitchen but all I could say it does have great heat conductivity compared yo stainless steel. However, note that it doesn't have the heat retention as cast iron but I wasn't looking for that. It sears great, elegant and sophisticated in design, devolops a great seasoning enamel, works great on induction, and overall a great price for what it delivers. I know in the future my family will love this pan and I hope it becomes a heirloom.
