Sample Recipe: Vegetable Lasagna

Prep: 20 minutes / Cook: 6 minutes on stove top plus 7 hours on low

Directions:

1. In a small saucepan over medium heat, heat the olive oil. Sauté the onion and garlic until tender, about 6 minutes. Remove from the heat and stir in the marinara sauce.

2. In a small bowl, mix the ricotta cheese with the Parmesan.

3. Line the slow cooker with heavy-duty foil and spray with nonstick cooking spray.

4. Put one-third of the marinara mixture in the slow cooker. Top with half of the noodles, breaking some to fit if necessary.

5. Top the noodles with half of the cheese mixture, followed by half of the spinach.

6. Add half of the remaining marinara mixture and the remaining noodles, cheese mixture, and spinach. Top with the remaining marinara mixture.

7. Sprinkle with the mozzarella cheese and paprika.

8. Cover and cook on low for 7 hours, or until the noodles are tender when pierced with a fork.

9. Turn off the slow cooker and let stand, covered, for 30 minutes.

10. Using the foil, lift the lasagna out of the slow cooker. Slice and serve.

Ingredients:

  • 1 tablespoon extra-virgin olive oil, 6 to 8 no-boil lasagna noodles, divided
  • 1 onion, chopped, 1 cup chopped baby spinach leaves, divided
  • 2 garlic cloves, minced, 1/2 teaspoon ground paprika
  • 2  1/2 cups Marinara Sauce (page 36), divided
  • 1 1/2 cups ricotta cheese, 2/3 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese, Nonstick cooking spray

The Complete Slow Cooking For Two by Linda Larsen is large comprehensive cookbook perfect for a two person household, whether you’re living with your spouse or a roommate. It’s amazing how large a tome this is—250 pages of various recipes of pretty everything you can ask for.I don’t cook nearly as much as I want to due to time constraints. And I eat out more than what might be healthy. But this book gives us many good reasons of why we should turn to slow cooking and how convenient it is when you’re short on time. There are many myths about slow cooking that aren’t actually true. Slow cooking is actually really healthy and pretty versatile, and if you do it correctly, can be delicious.Many of the recipes in this book are actually very simple to make and take very little preparation time. Most of these recipes only take about 15-20 minutes before work to prep and put all your ingredients in the slow cooker. Just set it on low temperature setting and let it cook during the time you are at work. I really like the whole “set it and forget it” concept. By the time you come home from work, you’ll have a complete meal ready for you.I really like how this slow cooking cook book is specifically written for two people rather than a large family. This is especially good for people who live alone or with one other person so there won’t be any leftovers that end up getting thrown out after several days. Instead, you can make something new each day. Many of these recipes are surprisingly good and most of these are a lot healthier than what you can buy outside. The recipes are diverse and full of variety—there are soups, chilis, stew, beef, lamb, pork recipes, poultry, seafood, vegetarian, vegetables, beans and grains, breakfasts, and even dessert recipes.I think the only weakness about this book is the lack of pictures. I would really like to see more pictures of the completed dish so I can get an idea what the completed result is supposed to look like. A hardcover option of this book would also be great, so you can more easily prop this book open on top of your kitchen counter. Over all, a very useful cook book to add to your collection, especially you’re a busy working person.I received this a physical copy of this book at no cost in exchange for an honest and unbiased review.

As I have said before, anyone who knows me knows I love to cook and I love to collect cookbooks! I love exploring new cuisines and learning new techniques! This cookbook entitled, 'The Complete Slow Cooking for Two' intrigued me. I have never done a lot of slow cooking because honestly I didn't know the benefits. This book answers the question, "Why Slow Cooking?" and after reading all the author has to say, you will, like I did...run to get yourself a slow cooker!

This cookbook not only teaches us about the slow cooker, it also focuses on cooking for two! Although I am not just a family of two, there are nights when my parents take the kids giving DH and I a chance to have quality time together. I don't want to spend the night cooking, so this is an ideal way to make a home cooked HEALTHY meal for the two of us! Thankfully, the book helped me choose the right size cooker for me, and also gave me a lesson on adapting my recipes to the slow cooker!

I opted to choose recipes from the cookbook first. I was excited that DH and I prepped and prepared the meal together! It was brilliant that this cookbook covered many cuisines, as we like to explore different cultures foods. We certainly won't get tired of this cookbook as we can tour the world cooking one dish at a time!

I loved that this book gave tips and I was INTRIGUED by all the uses for tin foil! Who would have thought you can ball up tin foil, place it in the bottom of the slow cooker and have an instant rack! I also enjoyed the do's and don'ts. I appreciated the guidance this book gave in explaining the features and the different brands of slow cookers. I also found most helpful the prep, cooktime and instructions in the top left corrner of the recipes!

DH and I made the "Chicken Cacciatore", we set it up in the morning and 8 hours later, after Mom took the little ones, we started our "date" sitting down to eat a DELICIOUS meal that we had planned together. Romantic, it was! We plan on making more dishes and trying to double some for family night! We both highly recommend this cookbook, it not only teaches you about slow cooking, it frees up time, so we can spend together!

If you're like Hubby and I, you may have given up on trying to use the electric Crock Pot for meals because 90% of the recipes out there are for 4 or more servings, and there's times you just don't feel like making a huge mess for two meals or two people. Especially after a long, grueling day. It is sometimes easier to make a sandwich or nuke some leftovers, taste and texture be damned. In fact, we got rid of our Crock Pot years ago, and after this book, I'm kinda wishing we hadn't.

With plenty of advice about what slow cooker best suits your particular needs, tips and tricks, as well as helpful hints and healthy debunking of the many "Yeah, but I heard that..." horror stories that tend to surround slow cooking, it was a read that was quick, easy, easy to follow and in fact even taught me a thing or two about cooking with an electric slow cooker, so much so that I may just have to buy one again soon! The recipes call for stuff just about everyone has already in their fridge, freezer or pantry, and lest you think a slow cooker is good for just chili or stew, There's recipes for stuffed peppers, shepherd's pie, breakfasts and desserts!! I was able to adapt quite a few of these to my Le Creuset dutch oven, too, so if you're like me and short exactly one electric slow cooker, with some careful adjustments you're still ready to open up your culinary world to the magic of slow cooking.

This book was a pleasurable read, because it broadened my horizons to the world of possibilities of electric slow cooking, especially after spending years and years as a "range-top and oven only" snob. It made me excited to try out an old method of cooking I'd written off, and I think you'll find something (or two or three!) to love too.
