Sample Recipe: Vegetable Lasagna
Prep: 20 minutes / Cook: 6 minutes on stove top plus 7 hours on low
Directions:
1. In a small saucepan over medium heat, heat the olive oil. Sauté the onion and garlic until tender, about 6 minutes. Remove from the heat and stir in the marinara sauce.
2. In a small bowl, mix the ricotta cheese with the Parmesan.
3. Line the slow cooker with heavy-duty foil and spray with nonstick cooking spray.
4. Put one-third of the marinara mixture in the slow cooker. Top with half of the noodles, breaking some to fit if necessary.
5. Top the noodles with half of the cheese mixture, followed by half of the spinach.
6. Add half of the remaining marinara mixture and the remaining noodles, cheese mixture, and spinach. Top with the remaining marinara mixture.
7. Sprinkle with the mozzarella cheese and paprika.
8. Cover and cook on low for 7 hours, or until the noodles are tender when pierced with a fork.
9. Turn off the slow cooker and let stand, covered, for 30 minutes.
10. Using the foil, lift the lasagna out of the slow cooker. Slice and serve.
Ingredients:
- 1 tablespoon extra-virgin olive oil, 6 to 8 no-boil lasagna noodles, divided
- 1 onion, chopped, 1 cup chopped baby spinach leaves, divided
- 2 garlic cloves, minced, 1/2 teaspoon ground paprika
- 2 1/2 cups Marinara Sauce (page 36), divided
- 1 1/2 cups ricotta cheese, 2/3 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese, Nonstick cooking spray

This cookbook not only teaches us about the slow cooker, it also focuses on cooking for two! Although I am not just a family of two, there are nights when my parents take the kids giving DH and I a chance to have quality time together. I don't want to spend the night cooking, so this is an ideal way to make a home cooked HEALTHY meal for the two of us! Thankfully, the book helped me choose the right size cooker for me, and also gave me a lesson on adapting my recipes to the slow cooker!
I opted to choose recipes from the cookbook first. I was excited that DH and I prepped and prepared the meal together! It was brilliant that this cookbook covered many cuisines, as we like to explore different cultures foods. We certainly won't get tired of this cookbook as we can tour the world cooking one dish at a time!
I loved that this book gave tips and I was INTRIGUED by all the uses for tin foil! Who would have thought you can ball up tin foil, place it in the bottom of the slow cooker and have an instant rack! I also enjoyed the do's and don'ts. I appreciated the guidance this book gave in explaining the features and the different brands of slow cookers. I also found most helpful the prep, cooktime and instructions in the top left corrner of the recipes!
DH and I made the "Chicken Cacciatore", we set it up in the morning and 8 hours later, after Mom took the little ones, we started our "date" sitting down to eat a DELICIOUS meal that we had planned together. Romantic, it was! We plan on making more dishes and trying to double some for family night! We both highly recommend this cookbook, it not only teaches you about slow cooking, it frees up time, so we can spend together!

With plenty of advice about what slow cooker best suits your particular needs, tips and tricks, as well as helpful hints and healthy debunking of the many "Yeah, but I heard that..." horror stories that tend to surround slow cooking, it was a read that was quick, easy, easy to follow and in fact even taught me a thing or two about cooking with an electric slow cooker, so much so that I may just have to buy one again soon! The recipes call for stuff just about everyone has already in their fridge, freezer or pantry, and lest you think a slow cooker is good for just chili or stew, There's recipes for stuffed peppers, shepherd's pie, breakfasts and desserts!! I was able to adapt quite a few of these to my Le Creuset dutch oven, too, so if you're like me and short exactly one electric slow cooker, with some careful adjustments you're still ready to open up your culinary world to the magic of slow cooking.
This book was a pleasurable read, because it broadened my horizons to the world of possibilities of electric slow cooking, especially after spending years and years as a "range-top and oven only" snob. It made me excited to try out an old method of cooking I'd written off, and I think you'll find something (or two or three!) to love too.
