How to make delicious TAKOYAKI
1. Mix the ingredients for the takoyaki batter in a bowl, making sure that there are no lumps. Add the other ingredients.
2. Place the butane fuel correctly in the butane stove and place the TAKOYAKI GRILL PAN correctly over the pan supports.
3. Turn on the butane stove and maintain it at a medium heat. Use the oiling brush to completely coat each indentation with salad oil.
4. After the butane stove has been heating for approximately 2 minutes, spoon the takoyaki batter gently into the indentations.
5. Push a piece of octopus into each ball of batter and scatter the pickled red ginger and green onion over the entire plate.
6. Use the bamboo skewer to pierce a small hole in each ball of batter.
7. Use the bamboo skewer to lift one of the balls carefully to check the color of the cooked side. If it is a light brown color, turn the balls 90 degrees.
8. As you rotate the rest of the balls, the uncooked batter pours out of the hole you made. Turn the balls another 90 degrees to achieve a perfectly round shape.
9. Lower the heat of the butane stove and continue to cook the takoyaki. When steam begins to be emitted from the balls, the takoyaki is done.

I'm very pleased with the quality of this item. I suspect those negative reviews for "knock-off" items must not be about the same item or from the same seller. When ordering, make sure to order the item marked as "IWATANI TAKOYAKI Grill pan cooking plate CB-P-TAF by Iwatani : Sold by Tokyo Wind and Fulfilled by Amazon."
At 8-inch x 8-inch (8 x 10 inches including handles) and 1.65 lb, it has a sold feel, very similar to waffle maker.
Diameter of the hole is approx. 1 and 5/8 inches / 40 mm.
Here is the list of features I like about this Takoyaki grill pan.
The 4 notches on the bottom corners align with the gas burner grate for secure placement.
The 8 mm lip on the surface helps prevent batter spills.
Easy clean and use, non-stick surface. (Be sure to use non-abrasive utensils)
The ridge details between the holes simplifies the task of separating batters.
Note: Mine didn't come with English instructions. The instructions and batter recipe are printed on the back of the product box in Japanese. (See photo).
You can use pancake/waffle batter on this, too!

Sometimes good octopus and fresh octopus is not easy to get in Los Angeles. I pulled from the takoyaki Git repository and made a fork to the default recipe, replacing octupus with BACON. I call this creation BACOYAKI. What you do is this, cut a couple of bacon strips into good bite sizes. Then, before adding any batter, place a bacon chunk into each takoyaki (bacoyaki?) chamber. Let each bacon piece cook somewhat, but not too much, just enough to develop some color. If a piece of bacon is exceedingly fatty, soak it up using some kitchen paper. At this point go ahead and pour the batter as you normally would, and make the BACOYAKI as you normally would. Enjoy!!!

NAILED it! This worked just fine on my gas range; followed the pictures on the mix I ordered separately, rotated the pan several times and had great results. For those unfamiliar with Asian cuisine and the use of chopsticks, you may find this challenging, but don’t give up. You will master it — it’s not rocket science. For the oil-free folks, this may not be for you. The oil is necessary to keep them from sticking. Maybe after a few uses/seasonings it’ll eventually become truly nonstick. I didn’t want to scratch my toy so I used wooden chopsticks vs the metal picks, and didn’t have a problem. I purchased the takoyaki mix/sauce and got the kewpie Mayo from my Asian store. Still have to figure out how to adjust the temp so it’s not crispy brown on the inside and moist inside.

My only complaint (and I’m not sure who made this decision, Amazon or the seller) is that it was shipped in the product’s box, so anyone could have seen it lying on my porch and taken it if they wanted. I appreciate the effort to reduce packaging waste but a little bit of privacy would have been appreciated. (It was also a gift so the surprise was kind of ruined.)
