Cook it fast or cook it slow: 150 flexible, flavorful Instant Pot and multicooker recipes designed for your schedule, from the James Beard Award-winning team at Milk Street.
Instant Pots and other multicookers can transform your routine, turning day-long simmers and braises into quick dishes that are achievable even on a busy weeknight. But did you know that the same pot is also a top-notch slow cooker, delivering make-ahead flexibility?
Milk Street Fast and Slow shows you how to make the most of your multicooker's unique capabilities with a host of one-pot recipes that show how to prepare the same dish two ways. For the quickest meals, use the pressure cooker setting to cut down on cooking time. And if you prefer the flexibility of a slow cooker, you can start your cooking hours ahead.
Tantalize your taste buds and change the way you cook with this mouthwatering menu:
- Vegetables shine on center stage in dozens of hearty vegetarian mains and sides like Potato and Green Pea Curry and Eggplant, Tomato, and Chickpea Tagine.
- From Risotto with Sausage and Arugula to steel-cut oats and polenta, get slow-cooking grains on the table fast -- no standing and stirring required.
- Beans cooked from scratch now join the weeknight lineup. Skip the overnight soak and load up on flavor in dishes like Black Beans with Bacon and Tequila.
- One-pot pastas mean more flavor and less cleanup. Cook Lemony Orzo with Chicken and Arugula right in the sauce -- no boiling, no draining, no problem.
- Cook chicken with a new world of flavor, from Chicken in Green Mole to Chicken Soup with Bok Choy and Ginger.
- Transform tough cuts of pork into everyday ingredients -- from Filipino Pork Shoulder Adobo and Hoisin-Glazed Baby Back Ribs to Carnitas with Pickled Red Onions.
- Make beef affordable by coaxing cheap (but flavorful) cuts to tenderness. Even all-day pot roasts and Short Rib Ragu become Tuesday night-friendly with little hands-on effort.
These dishes take advantage of the Milk Street approach to cooking: fresh flavor combinations and innovative techniques from around the world. In these pages, you'll find a compelling new approach to pressure cooking and slow cooking every day.
Praise for Christopher Kimball's Milk Street:
"Kimball is nothing if not an obsessive tester, so every recipe has an implicit guarantee . . . Scanning the streamlined but explicit instructions, you think: easy, quick, works, boom." -- The Atlantic

- Reviewed in the United States on September 24, 2020This is the first time I have ever received a book like this that is suppose to brand new! It looks used, it looks beat up, there are dirt marks everywhere. It is disgusting! Every page is bent. Some even torn and dirty! Highly upset!
9/25 2nd update: Just received a replacement for this book that I previously return, and it’s significantly much better! Brand new like it’s supposed to be.. Images in this review - Reviewed in the United States on January 3, 2024We were gifted an Instant Pot, something I didn’t think we would have ever purchased. We love to cook, always looked at a pressure cooker as cheating. So when we were given it, we also purchased a few inexpensive cookbooks for an Instant Pot to help us with the learning curve. The Milk Street Instant Pot cookbook was the one we have used on a regular basis, after a year, its dog eared and stained, as we have used to book for over twenty five of the recipes, from something simple like polenta to clay pot chicken. They have all been very good, in fact I’m not sure I could have made clay pot chicken without the Instant Pot. If you were gifted an Instant Pot this year, do yourself a favor and get this book, some dishes require a little bit of prep, but you will be rewarded with what you can make. Great book to have on hand.
- Reviewed in the United States on May 11, 2024If you’re looking for Instant Pot recipes that turn out good all the time - Christopher Kimball’s - Fast and Slow cookbook is what you need.
Before I bought this book - I searched the web for recipes and including the Instant Pot app. I even bought a book call The Instant Pot Bible.
The recipes in that book and from the web did not turn out 100% of the time - notably for desserts. I always followed the directions to a tee. I was unsatisfied 50% or more of the time.
Then I seen 177 Milk Streets book. I bought it and every recipe to date has turned out deliciously yummy 100% of the time.
I recommend this book to anyone who has an Instant Pot.
- Reviewed in the United States on July 31, 2024This cookbook for the Insta pot is one of the best that I’ve seen. It addresses vegan meat. Vegetarian and many international cuisines from all over the world.
- Reviewed in the United States on October 26, 2024I love my Instant Pot. I love Milk Street... I do not think they combine well. Remember, Milk Street tends towards complicated recipes. Instant Pot is about speed and ease. Not really a workable combo.
That said, my son prepped an Italian Mac n Cheese out of this cookbook. He is a good cook. His final product on this was not good. I think it would have helped if we had really liked the cheese we used. It was very thick and very heavy, and there was way too much of it. In addition, he told me that the only thing made easier by the recipe was the cooking of the pasta. The sauce etc would have been easier prepared on the stove top, in a pan large enough for the quantity and nature of the main ingredients: a pound of cheese and a cup of heavy cream. Yes, we had the recommended size of Instant Pot.
Furthermore, it took me more than an hour to clean up afterwards..... the sauce solidified in the pot, and the sink, and on all the utensils, as it covered. I thought i might have to throw out the pot, before I realized that filling with boiling water, and letting it sit briefly, before using a plastic spoon to scrape it out. Then I had to scrape down the sink too. Finally, I had to carefully clean the nooks and cracks off the machine, plus all the splatter from the overflow. Yuck.
I looked over the book some more, and found that some of them make good use of the pressure cooking features, like cooking meat faster. I can't argue with the slow cook feature also. I use it all the time. I think some of what I normally do.... saute and then slow cook.... is represented. But this recipe was so bad, I will have to consider whether we will try again.

5.0 out of 5 stars Most amazing cookbook!
I have picked up many, many cookbooks in my time, and this is the first to have such an impressive amount of recipes I'll actually try. I've already started on my list and have had excellent results! I adore my instant pot; it fits my needs for cooking so perfectly. And although I don't do any slow cooking, the friends I have who cook do, and don't pressure cook. I'm the only pressure cooker! So I appreciate the conversion for slow cooking so we can explore these recipes together. The joy I feel when I collect another great recipe into my treasure trove is the best! And it has been one great recipe after another. ❤️

5.0 out of 5 stars Fab cookbook
Have been using with my Fast Slow Pro…. Excellent, flavourful recipes with an international twist, and very clear instructions. Easy to work out how to adapt instructions from Instant Pot to this version of device by Sage.

5.0 out of 5 stars Every recipe I've tried is a winner
I love this book. The butter chicken itself is worth it: blending roasted salted cashews with water to make a kind of cashew cream (instead of using cream or butter) is genius and tastes amazing. Recipes are simple enough, quick to do and also look like the picture (they are gorgeous by the way). Extremely happy with this book.
