I'm trying to cut down on "empty" carbs where you don't get anything good out of it. These have a lot of protein and fiber, which is filling and makes me feel better about the carb content. The texture of these isn't really like normal pasta, but it still "feels" carby, unlike shirataki noodles. The variety box is a good introduction to all the flavors in this line. I thought the black bean had the best texture of the spaghettis, and the edamame/mung bean fettucini was probably the most versatile in terms of the kinds of sauces you could use with it. I will say that the spaghettis are very thin and fragile and some of the packages had a TON of very short broken fragments.

So good! Protein content is very high and carbs are low. This is a great way for vegans to get their protein in. I love being creative with the different kinds of pasta. Last night I cooked the black bean pasta and added sauteed artichoke hearts, garlic and mushrooms. HIGHLY, HIGHLY recommend this gluten free, delicious and fun food!

The red and black bean pastas are great! The green is fine, the plain is... plain. Put lots and lots of sauce on those. Being fairly low-carb the past few years, pasta is one thing I miss terribly. While this isn't as good as "real" pasta, the texture is better than other options I've tried, and the flavor is mild enough not to interfere with an amazing homemade sauce.
Um, just be careful and don't eat a preposterous amount... these are made 100% from beans. The first time I had this, my tummy was all swollen and unhappy that evening, since I ate way way too much. Live and learn, right?

All in all, a healthy pasta substitute for those wanting more protein and less carbs.
Pros:
-High in protein, iron, and fiber
-Lower in carbs than your standard noodles / pasta
-Despite being made of beans, they are not overpoweringly "beany" in flavor. Like a typical pasta, a lot of the flavor comes from what you add to it (pasta sauce, meats, vegetables, etc.).
-Vegan and Gluten Free (A pro if you're into that sort of thing)
-The variety pack allows you to figure out which items you like, and which you may not.
Cons:
-For a pasta, the price is very high.
-Each bag contains 4 servings, but due to the consistency and being packaged in a bag it's hard to split into individual servings without a scale.

I originally discovered Explore Asia gluten free noodles at Aldi. They had the black bean spaghetti and also an edamame spaghetti. I bought two of each bag just to try them. Now if you're familiar with Aldi you know that just because you found something there once doesn't mean you will ever find it there again. I should have hoarded them and bought them all! They were fantastic!
I try to eat relatively low(er) carb so these are a perfect alternative to regular pasta as not only are they much lower carb than regular pasta but they also have a crap ton of protein. What's not to like about that?! This package comes with black bean spaghetti, soybean spaghetti, adzuki bean spaghetti, and edamame & mung bean fettuccine. They have all been delicious. They do NOT taste like regular pasta, but they are a great alternative to regular pasta. I have used them in Italian dishes, Asian dishes and used the fettuccine in my beef stroganoff. My boyfriend has loved every meal we've had them in. I'll definitely be ordering more; these are going to become a pantry staple for us.

I was somewhat hesitant to try these but that turned out to be a total waste of energy, they are amazing and delicious!
I thoroughly enjoy the Black Bean Spaghetti & Edamame/Mung bean fettuccine. I've yet to try the soy but I can honestly say I've eaten them all raw and I could probably forgo the cooking they are that good!
I sometimes use a simple butter/garlic sauce or homemade spaghetti sauce with or without meat.I often lay the noodles over crisp salad green for some added texture. They must be cooked exactly as the recipe calls for, overcooking will destroy them. I cook them for 8 minutes after the water has returned to a boil and rinse in cold water immediately after cooking. I then return the noodles to the warm pot and add a bit of butter and seasonings like furukake (homemade) or just some sea salt and cracked pepper. The spaghetti looks and feels like regular wheat based pasta except for the crazy purple hue. The texture is somewhat different from wheat but only very subtle. I supplement my protein needs with these beautiful foods regularly. Coscto also sells a 907 grm box of Black Bean Spaghetti.

I love these pastas and substitute them for regular pasta. They're lower in carbs and very high in protein. They do not do well if you are using pasta sauce, because they are so thin, but they are great with olive oil and garlic. If you're watching your waistline or just looking to eat healthier, these are a fabulous alternative to regular pasta.

If you are looking for an alternative to wheat based pasta, this is not a bad choice. I started using these about 6 months ago. However, I was not all that pleased with the flavor. The only one I truly enjoy is the Adzuki bean pasta. The others left me scratching my head and wondering what possessed me to make the purchase. If you do decide to give this brand of (healthy) pasta a try, I would suggest cooking them, even though they can be soaked overnight and eaten raw. I tried soaking the black bean pasta, and it turned out to be quite an adventure for my taste buds, but not in a good way. Fortunately, my common sense kicked in, and I started cooking them. The results proved to be a much-needed improvement in the texture department. I now cook the pasta, and I let mine cook for an extra minute or two because any longer will give you a mushy consistency that makes it look unappetizing. The adzuki bean pasta makes a very nice side dish with sauteed vegetables, but I would still opt for leaving the beans for jack to grow his beanstalk. My quest for an alternative, healthy, and tasty pasta continues.

Love these noodles that are nutritious and gluten fee. I have had the black bean version before and was very pleased with the taste and texture, so I went with the variety pack so I can try them all. I would highly recommend these for those who are watching their carb intake. I have tried the miracle noodles and I just haven't been able to get past the smell and texture, so these are a great alternative for me.You can use them in any dish as you would regular spaghetti pasta. Will definitely buy again since my local grocery store does not carry the variety that amazon does.

Delicious, full of fiber, gluten free, made of beans. I usually make these into a stir fry of sorts. I'll season my meat or tofu, cook it in the pan, remove it, cook my veggies, add the meat back, add my sauce or whatever, then add these cooked noodles and stir fry it all together. It is delicious, and sometimes ends up being 100% DV or fiber in one meal. If you want to go more Italian with these, I recommend using the soy bean ones for that. The Edamame and Mung bean pasta tastes very green, but the others don't have too much of a flavor by themselves.
