I started using the Sous Vide method of cooking a few weeks ago. I was not satisfied with the pan method of searing steaks, chicken, etc. so I began researching other ways. First I tried our charcoal grill but it took too long to get started, took a lot of charcoal, and most importantly, the coals were too far from the food to be effective as a searing device without overcooking the meat.

One person suggested using the pan method but adding a Searzall attachment to a torch I didn't own connected to a propane cylinder I also didn't own. The cost for all that was about $135 including two 16.4 oz. propane gas cylinders. Since that method did seem like a better solution than the cast iron skillet alone, I continued my research.

As my wife and I are now empty nesters, we didn't need to have a large, but very nice, charcoal grill for just the two of us. It took too much time to get ready, too much charcoal to do the job, and as I mentioned above, didn't do a good job of searing. I even tried using the charcoal starter chimney with a small grill on top, and that did work. However, you had to pretty much fill the chimney up with charcoal in order to get the fire close enough to the meat to sear it without overcooking it, and you could only sear one steak or pork chop at a time on a nine inch surface. Plus, even though I could have purchased a grill that was made to fit on top of the chimney, it just seemed a bit too dangerous to me.

So, then I began looking for a small portable grill, thinking that it could serve as my searing device as well as a grill for two. I purchased one and gave it a go. Again, the charcoal was too far from the grill surface and didn't do a good searing job. It worked OK as a normal grill but that was it.

Then I discovered a couple of portable grills that included a small fan to help the flame to not only get the grill ready to use faster but also would provide a hotter surface to provide the searing heat that I needed. I read the reviews, watched a few videos on both of the grills and decided to purchase the Velocity Grill. The cost was not that much more than the Searzall group of products, plus I also had a grill to use for 'normal' grilling.

Since the Velocity Grill does not recommend using charcoal (it will clog up the holes above the fan), I purchased a bag of hickory wood chunks. You can get these at Lowes, Home Depot, or even Kroger for about $5-6 a bag. I also purchased a wax type lighter. Since I already had a couple of 5V battery packs for charging my phone and tablet, I used it along with the generous length of cable supplied with the grill to power the fan. I could have inserted three D-Cell batteries but only had two in the house.

I removed the grill surface and the heat diffuser plate (which is the main reason I bought this grill), put a piece of the wax lighter in the burn chamber and lit it, turned the fan on low until the lighter was burning fairly well, and then increased the fan speed to about half. When the lighter was burning a bit better, I chose a chunk of wood, put it in with the lighter, and waited for it to get going. When it was burning well I turned the fan control up to 'Sear' and replaced the grill surface and heat diffuser plate.

Within about 5 minutes, the grill was ready to sear my steaks. Wow, there is no comparison between the Velocity Grill and any other method I had used or researched! After turning the steaks a couple of times I put some butter on them and that kicked the sear up a notch. And the flavor of the steaks is much better than searing in a pan. The whole process took about 10 to 15 minutes from starting the fire to finishing the sear.

Cleanup was surprisingly easy. After the fire went out, the only thing left was some ashes from the wood and of course some food residue on the grill which I was able to clean using the supplied grill brush. The heat from the flame was enough to burn off the meat drippings and butter from the diffuser plate. The second time I used it I dumped the still burning wood chunk into my other large grill and was able to finish my cleanup a bit faster.

The third time I used the grill I invited my son over. He, too, had begun using Sous Vide and was wanting to see how well the Velocity Grill handled the searing process. He had been using the pan method and was not all that happy with the results. Needless to say, he was blown away with my grill.

After we had finished searing the meat he turned the grill around to see where the battery plugged in and discovered several cracks in the base of the grill that I had not seen when I unpacked it. Apparently I never viewed the back side of the grill and was able to just reach around and plug in my battery pack. I reached out to the manufacturer (velocitygrill.com) and told them about the cracks because I didn't think Amazon would accept a replacement on a grill I had used three times. The manufacturer responded rather quickly and asked me to supply them with my address and they would ship me a new base which they said would be easy to replace. I was impressed!

So, if you want a grill that works like a regular grill, searing grill, and even a way to pan cook food with a fan-controlled temperature control, I highly recommend the Velocity Grill.

Love this grill

Love this grill, but I know it's not for everyone. I look forward to using it every week. Genius design. I chose this over the Cook-Air because of the problem I've read where the Cook-Air's lid pulls up the diffuser+grate when removing it. I also would prefer the analog knob than the LED button display. Being able to use the USB power cable with this makes it versatile as well.

PROS:
1. Easy Maintenance - just empty out the ashes and brush away. No greasy mess.
2. Truly Portable - I cooked off my USB power bank and brought it around with no problem at all.
3. Quick & Easy startup - Once you get the hang of getting a chunk of wood burning, you're golden. I'm still amazed at how fast I'm able to get the grill blazing hot.
4. Fuel & Flavor - No worrying about propane refills or waiting for charcoal. The different types of wood chunks available give me the flexibility to experiment with different food/wood combos. The smoke imparts a delicious flavor you can only get over open-fire cooking.

CONS:
1. Smoke - Fatty foods = copious amounts of smoke. I was cooking 70/30 ground beef patties and I couldn't see the patties because of the amount of smoke.
2. Size - For some that are used to large grills with different heat zones where you can cook a bunch of pieces "low & slow", this isn't for you. I'm able to simultaneously cook 3 regular sized ribeyes. I've done 12 medium sized sausages. Also 4 x 4" burger patties. Even if you're cooking for a large party, things cook so quickly, you can get more meat on in the same time it takes to cook both on a larger grill.
3. Temperature Control - You can turn down the fan but it also increases the smoking. No variable zones of heat. This is great for recipes that require high intensity heat.
4. Noisy - The fan isn't unbearably loud, it's annoying if anything. If that doesn't bother you, it's not a problem.

Wish there was a compilation of recipes for high heat cooking. Possibly a forum for these fan-type grills.

Cook-Air vs Velocity Grill

I have now owned both of these. In my opinion, this is velocity grill is the better of the two. My Cook-Air broke Cook-Air EP-3620BK Wood Fired Portable Grill, Black after I left it outside for a few weeks. ( So don't do that)

Here are my points on why I rather choose the Velocity Grill : Build Quality
*The radiator (heat sink) is one piece. Cook Air radiator broke after about 10 uses. I had to do self repair. There is a small bolt holding bottom plate and upper plate on Cook-Air
*Lid has holes to vent smoke. This is not the case with Cook-Air. You have to prop it open or it will get too hot
*Lid can be latched on grill making it one unit to carry. Cook-Air gives an strange bag to sorta encloses it for carry
*Finer control on speed with potentiometer (Knob) versus pre set fan speed.
*Can use any usb battery bank (provided it can do 1 amp). Cook-Air has some hard to find amp/volt plug (never found a replacement). Hard to replace and make your own
*Handle to lift grate/radiator is brush aluminum and very functional pliers like gripping tool. Cook-Air give wooden handle with some strange metal piece to "latch" to both. no comparisons in this category really.
*Cleaning Brush provided is a hard plastic handle brush with wire bristles resembling a toilet brush. Cook-Air version is like a wooden stick a bit bigger than a chopstick in girth with about 20 little bristles sticking out of the end of it. ( I couldn't make this up guys)
*Good size handles that stay cool during operation. Cook-Air has much thinner "holding ring" It generally is warm to the touch but doesn't give me a stable feeling upon moving it if I had to.

I like the Cook Air when I used it until it broke. I wish i knew about the Velocity before the Cook Air

Why not 5 stars? If you were to open the bottom the grill you can see the very cheap (very simple) electronics that is the magic behind everything. Not to deter the chamber for to 2 stage fire, but the electronics and motor inside doesn't carry the same robust build feeling like the the rest of the unit.

Having said that.. It should be easy to self repair if the parts go out.

This is a great small portable grill

This is a great small portable grill. I only have 2 criticisms. The wood chamber is a bit small, so that if you're cooking very much, you have to add wood during the grilling. That's not hard to do, however. The other is that the fan eats up the D batteries in short order. It works great on shore power, or a car battery jack. It cooks steaks, chicken and burgers perfectly. It is what I use on all of my camping trips.This is by far the best grill that I have ever used, barring none. It makes it easy to cook the perfect steak, burger, etc... I use wood chips that I have made from fallen trees on my property. However, you can also purchase bags of wood chips anywhere grilling items are sold. The wood smoke imparts great flavor to the meat. Clean up is easy, too. Overall, a great grill. I highly recommend it.

It was ready before I was.

Got this a couple of days ago and had some chicken ready to cook. In no time at all it was hot and ready and before I was. The chicken came out just right. Tonight, I cooked a prime rib steak. Got everything ready and went out and lit the grill. I use a self-lighting butane torch to light the charcoal. Waited a few minutes and it was shooting sparks. I had turned the fan on sear to make it as hot as it could get and sear the steak. Used my trusty meat thermometer and took it out at 145 degrees and it was perfect pink inside and very tender and juicy. I did order a 13" porcelain grill on Amazon to use instead of the wire rack and it works great and easy to clean. As far as noise goes it was a little noisy when I first got it but now it runs smooth and quite. I did notice the battery compartment was a little too big for the batteries so I used a couple of washers between the batteries to make them tighter and a lot of the noise went away.

Nice Little Grille, Awesome Customer Service

I say this in every review I do, but not to sound cliche, but I'm an engineer, when I review something it's across a lot of perspectives, basic design, the manufacturing of the product and the usability, how well does it work and does it meet the manufacturer's claims. Why? Well, that's just what I do for myself so, I share that in this review.

The Velocity Grille is a very unique item, I originally purchased this grille for use with my travel trailer and camping. It's not something you would want to take on a 20 mile hike, but, it's perfect for the campsite or tailgating. It weighs about 17 lbs and it packs up nicely.

The design is unique from my perspective, a combination of pellet grille like operation with the old school use of real wood chunks in the firebox versus pellets. The startup is very simple, light off a tiny piece of fire starter, turn on the blower and load up the firebox with small half fist sized chunks of wood. Within 5 minutes, amazing it's blazing hot, it's really that simple. There a little tool that's provided to lift off the flame disipator and grille surface to add more wood for a longer cook. So far, mostly what I've used my Velocity Grille for is for searing heat after Sous Vide, haha, not even been camping yet.😊. It does a great job searing, turn it up to the sear setting and let it get going and flames literally come thru the grill grates on occasion, pretty cool. I seared a Ribeye for dinner just last night, fantastic using hickory wood.

When I was done, I took the grilling surface off with the provided tool, picked the grille up by the cool handles and dumped the still burning coals and wood into my outdoor fireplace...all done.

How was the customer service? Awesome, the lid got damaged in shipment, it was cosmetic, didn't effect the operation, but, I called up Velocity Grille directly and they sent me another lid, no questions ask, what better customer service could you ask for.

So, Engineer's Opinion: Nice innovative Design, the manufacturing of the product is very good, and will refine like all things with time, usability is excellent with ease of use and accessories to help...lastly, does it meet the manufacturer's claims? Absolutely meets the claims, gets very hot, very fast and provides nice smoky flavor to meats.

This is a nice little grille, cooking for a small group, camping, tailgating, searing Sous Vide...it's very versatile, I like it. 😃

It's not for everyone, like a person who has no place to get rid of the fire like a fireplace, fire pit of steel bucket...

Good For A Picnic, But There Are Better Options For Home

Pros: food is juicer and tastes better than the same thing cooked on a propane or charcoal grill. Light weight.

Cons: Uses a surprising amount of wood. The first time I used it I put in two chunks of wood, which is what I thought the instructions were saying to do, and after 5 minutes on sear the wood was completely burned to ash. Had to refill and relight. The second time, knowing what had happened the first time I put what I thought was plenty of wood in, but the fire went out before I could finish cooking two hamburgers. So I put some more wood in, and had to use another fire starter to get it going. But even that wasn't enough and I had to add wood a third time to finish the hamburgers. From what I can see you have to really fill the firebox to the brim with wood to have a chance of cooking anything, but even then, if you have the fan set on sear I don't think the wood would last more than 10 minutes, if that.
The second time I used it the fan control knob fell into two pieces. Speaking of fans, on sear the fan makes a noise similar to a hair dryer; not as loud, but much higher pitched. I find it very stressful to listen to.
Powering the fan is a little problematic. The maker thoughtfully included a very long USB cable with an AC adapter and 12V cigarette lighter adapter, but if you're using the AC adapter you still need to be within 10 feet or so of an outlet. And when you're finished you have to roll up the cord and store it somewhere, unless you're not afraid of leaving it lay in the yard. You can also run the fan off USB battery power or 3 D cells, which seems more practical.
This stove seems to be mainly intended for use at a picnic, camping, tailgating, etc.. For that I think it would work pretty good. I bought it intending to use it at home to cook small, quick two person meals, as an alternative to starting up the Weber. Doesn't really fit the bill. It works very well if you're trying to sear a steak, but if you're cooking something that needs to be cooked slowly for 20 minutes or so I think something else would work better. This stove seems to have been designed to cook things that need to be cooked on very high heat for a short time only.
Update: decided to do a more scientific test of the burn time. Flipped the unit over to install batteries, discovered that two of the rubber feet were missing. Found them in the bottom of the shipping box, installed them. Filled the firebox as full as I could with wood chunks and set the fan to sear. Evidentally the BBQ wasn't designed for that much wood as within a few minutes flames were spilling out of the firebox and the lid and handle were too hot to touch. Let it keep going and by 12 minutes or so it the heat had greatly diminished, way below searing temperature. By 15 minutes there was nothing left but embers. Conclusion: filling the BBQ with a more realistic amount of wood would give you a sear time of maybe 8 minutes? Probably about right for a steak cooked rare, but not for a hamburger?

I used it tonight for the first time. I cooked a pair of Hogzilla sized boneless Pork-Chops and a #2 boneless Pork Tenderloin. I had pre-marinated in Pineapple juice to provide flavor and tenderness. I used a volume of Pecan and Orange woods equal to about a #16 oz beer-can (half at a time).. It was a perfect 145 degrees internally after about 30 minutes. It was superbly smoky, in a GOOD way! Cleaning the grill with the provided wire-brush was easy while still lukewarm. I look forward to using it again this weekend; maybe a pair of Quail and a chunk of Salmon.

I have a Weber genesis and a Q series love them both but was wanting a grill that i could get the wood / smoke flavor and the flame kissed steaks that I used to get over a camp fire but without all the hassle and time it required.

I believe I found it, this grill fires up easy and fast.

My first BBQ was bacon wrapped chicken filet I cooked way to high so they shrank about 50% but still okay, my 2nd and 3rd attempt were butcher style thick Ribeye able to fit 4 on the grill easily.

Seared both sides and flame kissed the edges like a Pro everyone was pretty amazed by the flavor
the wood (mesquite chunks) and fire adds to the meat.

I had a small issue with the shipping (arrived 2 days late) but was well worth the wait.

The heat diffuser plate is heavy duty and does a great job for distributing the heat for an even cook.

I know I will have a few learning curves but this is now my go to grill.

Also can't wait for the grandkids to roast some marshmallows over the fire.

This small wood grill does exactly what i was looking for, achieve high temps quickly and give a good sear. Steaks and burgers cooked on this come out so juicy and tasty and very little flare up due to the difusser plate under the grill. I love that it uses wood, i use the hardwood chunks i use on my charcoal grill for smoking so i get a nice smoke flavor every time. The grill is expensive for a small portable grill but it does sear extremely well (i routinely get temps in the high 900 range, farenheight ).
