Molecular gastronomy is a fusion of food science and culinary arts that uses new technologies and natural texturing agents to break down any dish or cocktail and reform it with a twist. Good stuff

I didn't expect 80 gram comes in an tiny can, that was an trial size version of the larger product that they do carry that cost around 30 dollars. It pops pretty good. Ive read other negative reviews, and it seems they try to incorporate into something that already have some liquids and say it doesn't work. It only meant to use most outside applications like dipped chocolate coated strawberry, then crusted with popping sugar.

As I am going through all my Molecule-R purchases today, I am realizing that they are not a high quality product, the sugar is completely bricked together. I like the fact that what little I was able to break away from the solid cylinder of sucrose is that that it popped well and went well as a garnish to my deconstructed almond joy

A sticky surprise.

This is a mixed review. The product itself is great and complements greatly our molecular cuisine workshop with the kids. But for the first time in many years, the shipping had a problem. Popping sugar is sensitive to heat and humidity and when I opened the box, two of the four canisters had popped open and made a sticky mess inside the box. The other two were well closed and undamaged. A small set back from many years of great service and prompt shipping. That being said, I will still order this product from Amazon.

More clarity in the description, please.

I don't know why, but I was expecting a full-sized container. Instead, I received a tiny canister that looked like something that Molecule-R would give out as a sample.

The product itself was great.

Fun ingredient to add to homemade candy I might try it in a cookie next.this was very hard to find at a reasonable price so I am saving it for special confectionaries to give to friends and family.

Hard to use

This is really hard to work with. You can't get it moist at all, which means it's next to impossible to adhere it to anything. Otherwise, very cool.

The popping sugar seemed to have lost it's fizz, and did not snap in your mouth the way I expected.
