I was given a bottle of this, among other grilling accessories, as a Christmas gift this year. I was intrigued when I first saw it as I had been considering purchasing a mini-fridge and hacking it up to make my own dry-aging device, and this seemed far easier.
The sauce smells funky, but no surprises there since fish sauce is the #1 ingredient. The taste of the product wasn't bad.. it's not really like a true dry-aged steak, but it's good in its own merit. My biggest problem with it is that it tastes nearly identical to how my steaks taste when I simply brush them with fish sauce. The second time I used it, I prepared one steak with this sauce and another with only fish sauce brushed on it. Tasting them back to back, three different people (myself included) could hardly taste a difference. This sauce had a *slightly* richer flavor, but it also has additional salt, MSG, sugar, etc., so that's not at all surprising. You could very easily mix up your own fish sauce / soy sauce / msg / sugar batch yourself and get an identical product for a fraction of the price.
This leads to my biggest issue with this product - it's $25 for 8 ounces of what is largely fish sauce. There are a host of other ingredients thrown in in small quantities, but it smells like fish sauce, and the results of it are near-identical to that of fish sauce. I'm willing to support businesses coming out with innovative products, but this is pretty ridiculous.
And, not for nothing, I feel like most/all of the 5-star reviews for this product are fake. All but one were done on the same day or within one day, and all but one of them all only have a review for this product and one other random product, nothing else. Not only that, but none of them purchased on Amazon, either. Seems really unlikely that 5 people would purchase a product on a different site than Amazon and then just happen to review it on the same day, all while having only also reviewed one other product prior. It's like companies don't even try to hide fake reviews anymore.
Great if you're in a pinch for some quick flavor

I don't love it, but I don't hate it either. Could I do without it? With another seasoning yes. Was it tasty? Yes, but the flavor is not something I found particularly memorable. Like most of the reviewers noted, the main ingredients are soy sauce and fish sauce, so it's nothing groundbreaking. That said, I purchased this when I was in a pinch and needed some quick marinade, and it did the job. However, I wouldn't call this a staple in my pantry. Is it worth the price? It is if you need something right now, but it's something I would pass up if I had more time to plan. But to each their own. Worth the try if you can spare the money.

When tasted raw, the taste profile is a umami bomb reflecting its primary ingredients (fish sauce, soy sauce, molasses and worcestershire sauce), with perhaps the fish sauce dominating a tad too much). However in cooked food its a good deal subtler but effective, delivering a good meaty punch. Overall I really like using this on steaks, but its too pricey for use in larger volumes. Using a slug of balsamic with a slug of kepis manis (or soy paste, or any of the thicker versions of soy sauce) is just as effective for sauces and stews and a lot cheaper.
Sous vide is a great way to make a decent cut of steak taste ...

Sous vide is a great way to make a decent cut of steak taste great. And this aging sauce takes it to a new level. Just put in a tablespoon or two into the bag with the steak before sealing, and the steak comes out with a depth of flavor that's a real pleasure. Not exactly the same as dry aging a steak for a month, which affects the texture, etc., but with that in mind, it's a wonderful, and very easy, addition to the kitchen.

This is really really good. I am blown away in a good way. My Sansaire kitchen toy is among my favorites and you can ONLY have a perfect steak using it along with this sauce. A bit pricey but, honestly, you do get what you pay for. In this case you get a lot more!

I have been using this with my SousVide cooker for a few years now and I have yet to be disappointed. Yes, it's pricey but the results are worth it. With a nice steak or tenderloin all that partake rave with the flavor. Five stars.

Once you open the souse vide pouch and smell the awful fishy aroma you'll know what I mean by awful... I did two steak at the same time , one with this product, another without... The steak without this stuff won the taste test hands down.. Don't buy this, you'll thank me later. $25 drain pour
