The seasoning process will last about 1 to 1½ hours.
Seasoning is an important step to prepare the surface for a
natural nonstick finish. It makes removal of the crêpes easier
and reduces bubbling when batter is applied and spread.
1. There is a protective coating on the cooking surface. Scrub
the surface with steel wool and detergent to remove the
coating and pre-clean prior to the seasoning process.
2. Plug unit into outlet in a well-ventilated area.
3. Switch on the appliance and set to 570°F. Allow to heat until
green READY light is lit.
4. Pour about a tablespoon of corn or peanut oil suitable for
frying in the center of the cooking surface. Using a cotton
cloth or paper towel (synthetic materials will adhere to the
surface), spread the oil evenly and let cook for 5 to 10
minutes until the surface loses its initial sheen and
appears dry.
5. Repeat step 4 eight times, burnishing the surface with the
towel and decreasing the amount of oil used each time until
a deep amber color and smooth, non-tacky surface are
developed.
CLEANING AND MAINTENANCE
The Waring™ Commercial Crêpe Maker should be cleaned after
each use with warm soapy water. The exterior of unit may be
cleaned by carefully wiping with a damp cloth.
Clean cooking surface while the unit is warm, using warm soapy
water. DO NOT USE COLD WATER ON WARM SURFACE.
Do not immerse completely in water to clean. The appliance is
not to be cleaned with a water jet.
Spatula and Spreader are dishwasher safe.

First tip: Don't panic until you season the grill. Out of the box it was not warming an where near hot enough to make a crepe let alone to season. I do not understand the dynamics, but as soon as I put oil on, the temperature shot up and has worked well ever since. We have had it in use in our small restaurant for over a month now and it performs just as well, if not better than the more expensive French brand that we had for only 18 months. The French brand is not serviceable as the body is welded (also prevents cleaning inside). This is serviceable with a list of recommended repair businesses in large cities.
This crepe griddle also has a couple of design improvements over our old French model: The steel griddle is slightly larger than the base, which keeps less oil and crumbs from entering the inside base. (I suspect this led to the former grill's demise).
The temp gauge on ours does not match the actual temp, but we have an infrared thermometer so its ok for us. Once temperature is set it is consistant. Takes about 25 minutes to get up to temperature, but that is normal for equipment and the thickness of the steel. There is a big difference in temp from center and edge, but our crepes come out beautiful. Will be ordering a second when we approach high season. Overall, my cooks agree they like this one better.

If you want to be a pro Crepe Maker, this will make you happy. It has become a Sunday morning tradition in my house ever since it arrived. The seasoning was a little tricky as I had never seasoned cast iron before. But there is a you tube video on how to do it. It does smoke a lot when seasoning it so do it over your exhaust hood. It does take about an hour to get to temp, but I just plug it in right when I get out of bed, so that's no big deal. Cooks really evenly and does a great job. I looked at the Krampouz unit to. I don't regret this one at all. Heavy duty built, total commercial quality.

I went through a phase 'after a trip to France where I wanted to open a creperie. I bought this monster and now it just takes up way too much room on my kitchen counter. It works really good and my girlfriend loves it.

Awesome crepe maker. We saw pros using this crepe maker at a theme park and also in Boston near Faneuil Hall. I bought one and after the somewhat extensive break-in, it made awesome crepes. The burn-in process took a long time, but that was not a surprise. The instructions tell you it takes hours. We have crepes a couple of times a month so this was a great investment for us.

It took a while to get the machine ready, about an hour and a half of oiling and allowing it to dry as suggested in the manual. I wish it came with a recipe book because I didn't have any and I wasn't sure what temperature setting to use for crepes. It took me 5 times to get it right, technique wise. I've been using a crepe pan from Sur La Table for many years and cooks my crepes very fast. So to have to wait longer for this machine to warm up to desired temp and then the cooking time taking a little longer definitely tested my patience. I've only used it once, and the first crepe stuck to the surface. I rubbed butter on it and that seemed to help. 450 degrees seems to be the magic number when it comes to cooking each crepe more quickly. I hope the cooking surface gets better in time because that sticking problem can be annoying. To save time turn on the machine first before you make ur batter and prepare your toppings. By the time you're done the machine will be ready (since it takes about 20 minutes for it to reach desired temp).

I love this product, it's impressively large...so plan a place for it cause its heavy. I wish it had an off and on switch...your paying a lot for it to NOT have this feature!

I have made crepes for years using a non-stick crepe pan on a gas cooktop and it worked out pretty good. After several trips to France I thought I would splurge on a professional model like this. However, its not been a great experience.
1. Seaoning Process : This has been extremely frustrating. I read and re-read the instructions many times, and even saw the Waring video which is pretty useless.
A. First of all its not clear how hard to scrub the coating off. I scrubbed for 2 minutes with steel wool and could not really see any change. I have since read that someone else said you have to scrub very hard to get the coating off. Am I supposed to scrub it 20 minutes down to raw silver metal? Who knows?
B. I used peanut oil and a paper towel as recommended. It says to wipe the oil off after each step, but when I did it seemed to scuff or scratch the coating. These scuffs never really went away.
C. The center 1/3 is black as coal, the middle third is brown, and the outer ring is almost the same color as it was originally. Its really obvious that the center is hotter than the edges - from this and seeing how it reacts to oil being put on it. Another reviewer claims to have used a laser thermometer and it was 100 degree difference.
D. Its smells like rancid oil and will make your entire house smell like crap - best to do it outside with a long extension cord.
E. During this process I called Waring's customer service about 6 times and never got through to anyone. I left messages with my number and name, and now a week later I have yet to get any call back at all.
F. The video they put on youtube is almost worthless - just a repeat of the vague sketchy instructions. However, one thing I noticed on the video is that their unit has a cook top which is a dark gun gray uniformly across the top and sides. Mine does not look like that at all.
2. Miscellaneous Issues : no instructions on temperatures or any recipes. The unit is extremely heavy and takes up a lot of counter space - about double the diameter of a stand along induction cooktop I have.
3. I cooked my first batch, and they turned out tasty but small and weirdly shaped. It seems that its so hot (I cooked around 420 degrees) that it starts cooking the batter immediately - and thus when you try to spread it, it rips. The non-stick of the seasoning does seem to work fairly well though once the crepe is cooked - and the cooking is very fast. The final crepes are just using the middle third of the surface. Use of the metal spatula to scrape will scratch and scuff the cook surface.
4. I tried getting 0000 steel wool and smoothing it and re-seasoning, the scuffs remain. One thing I found is that its good to ignore their advice about using synthetic materials. A silicon cooking brush worked much better to give a smooth coating of oil. The overall look is kinda ugly with the uneven surface. I am not sure if I should spend an afternoon to sand it down to metal and start over.

We had purchased this for our start up business and was extremely excited to use it. Before this we had used a less expensive Krampouz crepe maker that worked perfect. We wanted something more industrial so took a shot on this model.
After seasoning the crepe maker, we had tried to make our particular style of crepe. What we had found out was that the middle of the griddle would be up to 40 degrees hotter than the edges of the surface. We had used a laser thermometer to confirm our experience. In comparison, we measured the Krampouz crepe maker to be less than 10 degrees different from any part of the surface. This can be extremely frustrating when you're trying to get your product down to then "T".
For our business, it seems that I will have to resort back to the Krampouz crepe maker for the time being.

This has been a wonderful addition to my kitchen and my family's love of crêpes! My only issue is, the green "ready" light is VERY dim and difficult to tell when it is on.

Love it! Be sure you season it as directed otherwise it won't work right (just like a dutch oven - remember, it's cast iron). Also, it comes with a straight spatula, but it's not long enough. I recommend a 14 inch version so you can get underneath the entire crepe vs. just half of it. And on more thing, an aluminum spreader is included, but in my opinion it's a bit heavy for the batter. Recommend wooden spreaders. Enjoy!!!
