Bought This Torch Attachment in July, Very nice searing at first but after 5 or 6 uses the mesh started to fall apart.

Wrote to the company for the warranty and haven't heard from them.

Hole was burnt in outer screen within three uses. In addition, searing was slow and tedious. Wrote to manufacturer for warranty claim but never heard from them. Sent a second request. Again no response. Returned to Amazon for refund versus replacement. Came to the conclusion the manufacturer does not deserve my custom based on the poor service and product quality. Good idea, poor execution

The Best Torch For Searing Sous Vide Cooked Protein

This is an excellent torch for searing the surfaces of meat, chicken, or fish that have been cook via Sous Vide. I went through three variations of chef torches before I finally found the Searzall Torch. I would highly recommend that anyone who purchases this torch go to the Searzall website and watch the instructional video about attaching the Searzall to the Bernzomatic TS8000 High Intensity Torch. The company is very specific about the type of torch head and propane gas canister that they recommend be used with this Torch Head. And it is imperative that you properly season the screens by performing the two minute burn in process before you attempt to use the Searzall on any foods. They even state that using the Searzall without the proper seasoning of the screens will result in the premature destruction of the screens. I've had my Searzall for over a month now and it does not disappoint. After using the Searzall, it becomes very obvious why they recommend using the 16.4 oz. propane cylinder. After turning off the Searzall Torch head, it remains very hot for several minutes and the wide base on the 16.4 oz. propane cylinder provides a very stable base (so the torch won't accidentally fall over) and can safely cool down. I have been using it three to four times a week and the front screen looks as good as it did after the initial seasoning. I can't even notice any warping in the screen. I still keep one of the smaller torches to use on small items that need slight sear, but, the Searzall is the go to torch for all of protein that comes out of my Sous Vide Cooker. And, after eating a steak, a brisket, or a chicken breast cooked Sous Vide, I can't eat food prepared any other way. It is that good!

Good for small meals or specialty items

Pros:

Looks neat. Fits my TS8000 well. Way less cleanup than grill or skillet searing. Can produce sears on complex and uneven shapes better than a flat iron skillet.

Cons:

At higher outputs, the propane flame is protruding from the sides and rear of the searzall. The purpose of the unit is to convert that flame's energy into radiant heat so as to produce an infrared sear. The escaping flame is therefore wasted, as is the fuel. Why recommend a 15,000 btu torch, when the attachment can't handle the flow?

Other thoughts:

I have been able to achieve OK searing, but it takes a solid 90 seconds per side of an "at temperature" ribeye. For more than 2 steaks, this is too long. A hot skillet or grill would be far faster at finishing your proteins. However, the cleanup of the torch is absolute and minimal, as compared with a grill or skillet. The torch also extremely limits any smoke from a hot oiled skillet.

I plan on trying this attachment to replicate a Honey Baked Ham ( where they flame the high sugar coating to produce caramelization)

I had heard great things but was not sure.

Well my torch top gave up the ghost, so I ordered a new 8000 and this to go with it.

Unfortunately I have not been able to directly test it. My blood test came back and my doc panicked again so I'm eating only sushi/sashimi for the next 3 months to cut 150-200 points off my cholesterol.. again.

On the other hand my wife is a great lover of the steaks I make and says that the cast iron finish is no longer needed as this is better.

I trust her with steaks as I do with everything in life, so 5 stars. No propane flavor on the steaks.

I should note that she has a great sense of smell as well as taste, unlike myself who couldn't taste the propane off the old torch. She is not a hyper taster (those people are amazing) but, unlike me, she can tell the difference between asphalt and vanilla ice cream in a blind taste test (IMHO both need more sriracha).

This definitely performs as advertised in terms of heating up quickly and producing radiant heat. It will put a nice crust on pretty much anything you cook sous-vide, and you really have to go out of your way to mess something up. The Searzall is a pretty slow and methodical sort of searing method, and even though it takes some time to get a sear on, you are not likely to overcook anything with this method.

All of these positives notwithstanding, this method of searing is incredibly slow and tedious. If you can sear any other way, you're probably better off searing any other way. I'm not going to say the Searzall is over-hyped or too expensive, but all those Youtube cooking channels make it look a lot more fun than it is. This is in my kit as a tool that does a job I can't easily do with any other tool, but it's definitely no joy to use, and I avoid it as much as I can.

Surprisingly Handy Tool; but not built for speed

Works amazing, especially with pre-sear technique for sous vide.The Searzall gives your steak a much more consistent sear and a much thinner crust layer which allows more juices to be retained by the less done centre of the meat (ie, medium/medium-rare etc). However, people should note that the Searzall is not a tool made for speed, as time is needed for consistency in the sear. Attached is a picture of a tenderloin of deer made prepared with the Searzall and sous vide with the aid of a Polyscience Immersion Circulator. I hope this review is helpful to any potential buyers.

The Searzall isn't nearly as fast or effective as my standard propane torch. The standard torch allows me to target and sear fat differently than lean meat. Since it's hotter and faster than the Searzall, it also doesn't heat as deeply leaving the meat as cooked by the sous vide.

Crisp and sear in seconds under intense heat

First, please don't use this thing without a fire extinguisher nearby. I don't mean to scare anybody off, as it's a very useful too, but when working with open flame, oil/fat and lots and lots of heat, and given that the device can be locked 'on' so even if you drop it it'd keep on torching, the ability to suppress a fire is a must. Keep the lid for the pot you're using handy too in case you need to put a grease fire out.

Overall, I love this thing. Once you get the hang of it, it allows you to very precisely hit a light surface sear on whatever it is you are cooking. I've used it mainly on sous vide steaks in combination with a cast iron pan, and the sear is just amazing.

I've seen a complain that it is not hot enough. It's true it won't conduct as much heat as a blazing gas stove on the cast iron, but it allows for a refinement of the sear in a way you can't do with cast iron. So I generally treat the side to a sear like that for a bit, flip it, then slowly wave the Searzall back and forth until I get it to right the level I want. You can see the surface change color and heat sizzle away on it with every swipe of the thing. An amazing tool. Just make sure you have a fire extinguisher handy.

Searing FAIL - This thing is garbage

This is my first ever review after purchasing thousands of items on Amazon... I purchased the Searzall along with the recommended torch, set it up correctly with the spacer provided and seasoned it just as the instructions and video instructed. Upon first use, the Searzall failed after trying to sear 3 steaks. The aluminum collar melted and it no longer worked properly. Not good. I reached out to Matthew at Booker and Dax team, sharing my experience. He replied asking for pictures, I sent them. I heard nothing. I reached out again, he said the pictures were too big, I resized them and sent them again... nothing still. 3 weeks in all. So $75 plus the $50 for the recommended torch and it failed the first use. Pretty annoying. I can get a great quality sear in less time with a cast iron skillet. It's more versatile.

Update - Matthew from Booker and Dax just reached out and is supposedly going to send me a new Searzall so I'm going to give it one more shot!
2nd Update - I never received the second Searzall and I just found the box containing the failed one so I figured I'd update this. This product sucks. It never worked as described, it's fragile and poorly made. I'm competent enough to know the difference between breaking something due to my inability to properly use an item and an item's lack of quality. This fits in that second category. I can't recommend this at all. Instead get a cast iron skillet and save yourself a bunch of money, plus you'll have a very useful tool which can be used for many other dishes. The Searzall is a piece of garbage... literally, it's sitting in my garbage as I write this. The only thing worse than the Searzall is their customer service. As a company, I can't see them lasting very long with an utter lack of follow through.
