Always wanted to get steak prepared like it is done in nicer steakhouse restaurants like Ruth Chris, never could. This little engine that could did it even better. Was too lazy to go to butcher shop to get USDA Prime (which is what a high end steakhouse would use), went to supermarket and got USDA Choice - steaks turned out more tender and juicy than in a restaurant. Because the heat is coming from above - very little juice escaped. My only concern is that the side of the steak that is facing out - does not get as charred as the rest of the steak, I usually slide the side that was facing out - in, when I flip the meat. I think a small metal shield that could slide down only to the position of the inserted grill grate, to keep the heat in on outer side - would eliminate this minor issue.
